Unlike a mirror glaze, velvet spray will give your desserts a soft and elegant texture. It particularly highlights the contours of a dessert, such as an entremets made in a Silikomart or Pavoni mold, for example.

How to use velvet spray
The velvet spray must be applied to a frozen dessert. This creates a thermal shock and triggers the crystallization of the cocoa butter and chocolate. This is what produces the small crystals that create the velvet effect.
Follow these few steps to cover your cakes with a velvet spray:
1) Cover and protect your work surface to prevent it from being stained with the velvet spray.
2) Shake the flocking spray can before using it.
3) Hold it about 20 to 30 cm from the area to be colored, then spray in thin layers. Try to be as even as possible to avoid forming small "clumps".
4) Leave to rest for about 1 hour after applying the velvet spray, to allow the color and texture to fully develop.
5) Clean the nozzle of the flocking spray can by rinsing it with hot water or blowing through it. Make sure to remove all remaining material so that the dye can be reused correctly next time.
If you do not eat your dessert immediately afterwards, you can put it in the refrigerator or freezer, even decorated.
