Food coloring in powder form
Powdered food colorings are often used to color macarons, for example, but also for all types of pastry preparations. This food coloring is a favorite among pastry professionals and cake designers. It's one of our flagship products!
You can even turn it into food paint ; just add a few drops of food alcohol or lemon juice to turn yourself into a painter.
What are the uses of powdered coloring?
Powdered colorant can be used in two ways.
You can use it like a classic food coloring , by placing a few grams of powder in your preparation. It does not take more than the tip of a knife to obtain a perfect coloring. You then just have to knead or mix everything. When the coloring begins to be uniform you can add coloring to obtain a more intense coloring. Be careful though, if you want to obtain a precise shade use the powder coloring little by little, you can add coloring but not remove it!
But what's the advantage over gel or liquid coloring ? Well, they give bright, powerful colors, and powder avoids adding wet liquid to the mixture, which is perfect for macarons, for example.
The second way to use it is very common in the world of cake design, it is to use it as a surface colorant.
To do this, simply dilute your powder in food-grade alcohol, lemon juice or water and then apply it with a brush to the area of your choice. This can be on a cake covered with sugar paste , an edible model, a sugar rose or on royal icing. You can also paint the inside of letters made with an embosser on sugar paste. There is also fat-soluble powder coloring for your fat-based preparations.

Special colors of powdered colorant

Food coloring gel

How to use it?

To color sugar paste:
If you have opted for a tube of food coloring, simply uncap it and pour a few drops of gel food coloring onto your sugar paste, then close it and start kneading. As you go along, you will start to see the gel food coloring bind to the sugar paste. Continue until it has a uniform color. If you are happy with the color, let it rest for a few minutes; otherwise, add a drop of gel food coloring for more coloring.
For food colorings in pots, you will simply need to use the tip of a knife or a toothpick to apply a few grams of coloring to the sugar paste.
To color pastry cream or whipped cream
Powdered food coloring is typically used to color pastry cream or whipped cream, but this type of coloring may not be strong enough to achieve a vibrant color. Gel food coloring is then used as a supplement.
First, you need to tint the cream with the powder, mix well, once well incorporated add a few drops of gel coloring and continue mixing. You will thus obtain a perfect and vibrant shade!

How to use it?
Using liquid food coloring couldn't be simpler! Unlike more solid food colorings like gel food coloring, you don't need to measure with a knife tip or a toothpick; simply squeeze the tube to see the food coloring drop.
Be careful to be precise and sparing when adding the colorant. To ensure you have the right amount, wait a little between each drop so that it is well diluted in the preparation, this will give you better visibility on the coloring.
The second use of liquid coloring is with an airbrush, you simply pour the coloring into this cake design utensil and spray the color onto your cake, a bit like a paint spray.
What materials should liquid dye be combined with?

Thus, you can increase or decrease the proportion of colors according to your recipe by multiplying or dividing the quantity.
For example : You can follow the proportions in the table for a small recipe by incorporating 6 drops of blue food coloring and 1 drop of yellow for a turquoise blue and multiply these quantities for a larger recipe by incorporating 12 drops of blue and 2 drops of yellow.
