Acetate sheets and rolls
Acetate sheeting is essential for making mousses, bavarois, entremets, and other cold or frozen desserts. It's what allows you to achieve that smooth cake edge with an impeccable finish.
We have several types of acetate sheets to suit your needs. You can find them in strip form, which you can cut to the desired length, or in classic sheets, ideal for creating chocolate decorations. Our acetate sheets are also suitable for lining your entremets molds or pastry rings. At Autour du Gâteau, you'll find acetate sheets in various heights, from 8, 15, to 20 cm. This allows you to choose the right one for your creation.

Pastry ribbon and acetate sheet
Rhodoid is a special plastic (acetate) sheet widely used in pastry making. It sometimes comes in the form of a ribbon or strip. It is particularly useful for making entremets or mousses and for facilitating unmolding in pastry rings and frames.

To make your chocolate decorations
A sheet of acetate is perfect for creating chocolate decorations. It replaces baking paper and is suitable for making tablets or delicate decorations. Pour your melted chocolate onto it, then let it dry.
Chocolatiers often use it for this purpose. With a piping bag, they make thin lines of chocolate on the acetate sheet, let it set, then carefully peel it off.
Line a cake with acetate sheet
Using acetate film is essential if you want your entremet or mousse to unmold easily and hold its shape. For this reason, we recommend buying it in ribbon or strip form. These are easier to adjust and insert into your mold or pastry ring.
Slide them inside, pressing them firmly against the sides of the mold, then pour in your batter or mixture. When your cake is ready, carefully remove the mold or ring, then the acetate sheet. The edges of your dessert will be perfectly smooth!
What thickness of acetate sheet should I choose for my entremet?
For your entremets, the ideal choice is a sheet of acetate with a thickness between 100 and 150 microns. This type of paper is more flexible, making unmolding easier.
Can the rhodoid be easily cut?
Yes, it can be easily cut with scissors or a cutter, depending on its thickness.
Is acetate sheet oven-safe?
No. Since acetate sheets are made of plastic or PVC, they will melt if you put them in the oven. This baking material is only for use with no-bake recipes.
What can be used as a substitute for acetate?
In baking and cooking, acetate sheets can be replaced with cling film, parchment paper, or a springform pan. However, we recommend using them for entremets, mousses, and Bavarian creams. Other alternatives may result in a less smooth, more wrinkled finish compared to acetate film.
Is the acetate sheet reusable?
At Autour du gâteau, we have a reusable acetate sheet model. But most are not. Generally, the words "reusable" or "washable" are printed on the packaging. If it is reusable, the acetate sheet can be easily washed with the soft side of a sponge.
