Unlike water-soluble (soluble in water) colorings, it mixes perfectly with fats, which prevents separations or unwanted texture effects. It is therefore essential for achieving clean and uniform coloring in fat-based preparations, particularly in chocolate making.

What coloring should I use for chocolate?
To color white or dark chocolate, you need a fat-soluble food coloring . It must be soluble in the cocoa oil and fat. Conversely, a water-soluble food coloring cannot mix with couverture chocolate . Therefore, you must choose a special chocolate coloring. We have them in different forms. Depending on your preferences, you can choose a powdered food coloring, a gel food coloring, or a liquid food coloring, as long as they are fat-soluble .

How to color an oil-based preparation?
For this, it is essential to use a liposoluble colorant, that is to say soluble in fats.
If you make your own homemade chocolate, there are several techniques available to you for coloring it using this type of coloring .
The first method involves incorporating the coloring directly into the melted white chocolate mass . Simply add a few drops of fat-soluble coloring and mix well until you get a uniform color.
The second option is to use fat-soluble powdered coloring , which you can dilute in a little cooking alcohol or lemon juice. Then apply this mixture with a brush to the inside of the chocolate mold, before pouring your preparation into it.
Finally, you can opt for a special airbrush coloring . Simply spray the color on the bottom of the mold, then pour the chocolate into it. This technique allows for a smooth and uniform finish.
In which preparation should the fat-soluble colorant be used?
Fat-soluble coloring doesn't just color chocolate!
It can also be used to tint a mirror glaze or a neutral cold topping made from white chocolate. If you want a 2-color marbled mirror glaze, use liquid fat-soluble colorants . These color cocoa butter but also candy melts to cover and obtain colorful cakepops.
You can also paint ready-made chocolate by applying edible powder with a brush. This powder is perfect for adding the finishing touches to your chocolate at the very end.
Where to store fat-soluble food coloring?
Store the fat-soluble dye in a cool, dry place, preferably at a temperature below 25°C; beyond this temperature, the quality of the dye may be affected.
Avoid direct sunlight on the fat-soluble dye. Direct sunlight can degrade the pigments.
Close the fat-soluble dye jar tightly to prevent moisture and color oxidation.
Keep it away from all sources of humidity, and do not store it in the fridge, for example!
Before use, check the expiry date: Expired dyes may lose their intensity and effectiveness.
