Gel colorants have a very powerful coloring power; in fact, just a few drops or the tip of a knife is enough to tint any preparation and obtain vibrant colors. This type of product is used to color sugar paste as well as its variations: modeling paste, tropical paste, for flowers. You can also color sponge cake, cake dough, and plain marzipan.

These very affordable gel food colorings are sold in tubes, bottles, and small jars. The cheapest on the market is Wilton gel food coloring, which costs €2.75 for 28 grams, or about 0.10 euro cents per gram.

What are the applications for gel food coloring?

Gel food coloring is used to color your pastries and cake designs, intensely and precisely without altering the texture of the food. Unlike liquid colorings, it does not modify the humidity of your doughs and preparations, which makes it ideal for coloring your icings, sugar pastes , macaroons and creams. It is used in small quantities and allows you to obtain bright and uniform shades very quickly.

When adding gel food coloring , you need to do it gradually. Use the tip of a knife, a toothpick, or a small baking utensil to take a very small amount and add it to the mixture. Mix well, then adjust by adding a little more if necessary until you get the desired color and intensity. Better too much than too little!

Tip : You can also wait a few dozen minutes after mixing the gel colorant, to let the shade reach its final color and then adjust as needed.
