The macaroon, an emblematic pastry
The star of individual French pastries, the macaron is a combination of almonds, icing sugar, sugar and egg whites, they are generally between 3 and 5 cm. This domed and rounded shape is obtained with the help of macaron molds or plates.
Famous pastries have made it their trademark, we immediately think of Ladurée when we talk about macaroons.
Macaron plates and molds
In order to make the most beautiful macarons at home, you will need a macaron mold or plate. Most often made of silicone, a material which allows easy release and easy washing. The macaron plates allow you to cook homogeneous and uniform macarons, without overflowing, it is an individual mold to have in your cupboards!
There are different sizes and shapes, some are plates with small round circles, others are heart-shaped allowing you to make macaroons for Valentine's Day for example.

How to use a macaron mold?
Preparing macaron dough is relatively simple, the most complicated part remains cooking. This is where everything comes into play. So we give you some tips for making perfect macarons.
When preparing the dough, sift the wheat and almond flour, there will be fewer imperfections. You will need to place your macaron mat on a perforated plate; this type of utensil allows for good heat distribution and more even cooking. Then pipe your dough and make small circles in the locations provided on the silicone mat.
When unmolding, to ensure that your macarons do not break, tap the perforated plate on your work surface. This will have the effect of peeling off the most stubborn shells. You can also spray mold release spray on the silicone plate before cooking.
Is the silicone plate dishwasher safe?
If your macaron mold is made of silicone, you can actually put it in the dishwasher. Silicone molds are very resistant to washing.
