Molds and circles for tarts and tartlets

What is the difference between a tart mold and a tart ring?
Both the tart ring and the tart pan have the same purpose and use: to make a decent tart. So why not just make pans or just circles?
Their difference lies in the base and the homogeneity of cooking.
The tart ring will indeed be more effective for achieving perfect cooking and will allow for easier unmolding thanks to its removable base, however this pastry utensil is more difficult to use. The tart mold is simpler to use but you will get less even cooking, unless you use a mold with a perforated base!

How to use a pie dish?
To obtain a perfect pie you need:
- Butter the bottom and edges of the mold.
- Stretch the dough well over the mold and prick it with a fork.
- Fold the edges well if the dough overflows.
How to line a tart ring?
Lining a tart ring is an art form ... but I promise, with the right techniques, it's (almost) child's play. Whether you prefer sweet, shortcrust, or shortcrust pastry, the technique remains the same, and the result is worth the effort.
Start by rolling out your dough on a floured work surface. Not too thin, not too thick: ideally, it should be about 3 mm thick.
Carefully roll the dough onto your rolling pin, then unroll it over your circle already placed on a baking sheet covered with baking paper (or better: a perforated mat).
Let the dough fall gently into the circle, without pulling. Using your fingertips, press it tightly around the edges, leaving no air bubbles.
For clean edges, lightly roll the top of the circle, or trim the excess with a knife.
How to clean a tart ring?
It all depends on the material of your mold or tart ring. Silicone, for example, is very dishwasher-safe and oven-safe. Conversely, it is not recommended to put a steel or stainless steel mold in the dishwasher, otherwise you risk removing the non-stick coating of the former and rusting the latter.
Generally it is best to wash any round mold by hand.
