Passion fruit puree 1kg

Passion fruit puree composed of 90% fruit and only 10% sugar, it is made from selected fruits picked at maturity to be prepared according to a natural recipe: only fruit and very little added sugar.

The recipe followed is that of a gentle pasteurization process, which preserves the taste of the fruit as well as its color.

Presented in a rigid pack with a resealable cap, this puree is ready to use.

It can be used to make fruit mousse, Bavarian cream, desserts, sorbets, ice creams, charlottes, fruit pastes, coulis, toppings, cocktails, etc.

With this Ravifruit passion fruit puree, you can make a passion fruit ganache recipe to garnish your cakes, here is the recipe:

Ingredients:

Passion fruit puree: 100 gr

Dark chocolate: 160 gr

Milk chocolate: 80 gr

Liquid cream at 35%: 200 gr

The process:

1 - Prepare a container with the 2 chocolates (in pellets, chopped or in small squares)

2 - Heat the passion fruit puree in a saucepan to around 80°C.

3 - Then add the liquid cream to the passion fruit puree in the saucepan

4 - Pour half of the hot liquid over the chocolates and mix with a spatula

5 - When the mixture is well blended, add the other half of the liquid and mix again

Your ganache is ready, use it to garnish macaroons or cakes.

You can also let it sit in the refrigerator overnight and then whip it and use it as a whipped ganache.
