Achieve perfect tempering of your chocolate every time with ScrapCooking's cocoa butter powder!

This pastry ingredient will be particularly useful for making chocolate coatings and ganaches. But it can also be used to make shiny chocolate decorations and ice creams.

Made from 100% pure cocoa butter, it will improve the fluidity of melted chocolate, making it easier to work with.

This baking aid is perfect for both beginners and experienced chocolatiers who want impeccable results.

Warning: do not ingest pure. For foodstuffs.

Use 1 g of cocoa butter powder for every 100 g of melted chocolate.

1. Melt the chocolate in a double boiler at a maximum temperature of 40-45°C.

2. Remove from heat and add the cocoa butter.

3. Allow the temperature to drop to 34-35°C for dark chocolate, or 33-34°C for milk or white chocolate.

4. Stir with a spatula until the mixture reaches 31-32°C (dark chocolate) or 29-30°C (milk/white chocolate).

Close after use.

100% cocoa butter.

May contain traces of gluten, eggs, soy, milk, nuts, fish.

Store away from light, in a cool and dry place.
