Raspberry fruit puree 1kg

Fruit puree composed of 90% raspberry and only 10% sugar, it is made from selected fruits picked when ripe and prepared according to a natural recipe: only fruit and very little added sugar.

The recipe followed is that of a gentle pasteurization process, which preserves the taste of the fruit as well as its color.

Presented in a rigid pack with a resealable cap, this puree is ready to use.

It can be used to make fruit mousse, Bavarian cream, desserts, sorbets, ice creams, charlottes, fruit pastes, coulis, toppings, cocktails, etc.

Description Raspberry fruit puree 1kg

We offer you this delicious recipe for homemade raspberry fruit paste.

Ingredients:

- Ravifruit raspberry puree: 250 g

- Sugar: 70 + 200 g

- Pectin : 7 g

- Glucose : 50 g

- lemon juice: 10 g

The process:

1 - Heat the raspberry puree to 50°C in a saucepan, use a spatula thermometer

2 - Add 70g of sugar previously mixed with the pectin

3 - Bring to a boil and add the rest of the sugar (200g) as well as the glucose

4 - Cook to 107°C.

5 - Off the heat: add the lemon juice and pour the fruit paste into silicone molds

6 - Leave to cool so that the mixture hardens then enjoy.
