Mango puree composed of 90% fruit and only 10% sugar, it is made from selected fruits picked when ripe and prepared according to a natural recipe: only fruit and very little added sugar.
The recipe followed is that of a gentle pasteurization process, which preserves the taste of the fruit as well as its color.
Presented in a rigid pack with a resealable cap, this puree is ready to use.
It can be used to make fruit mousse, Bavarian cream, desserts, sorbets, ice creams, charlottes, fruit pastes, coulis, toppings, cocktails, etc.
Contents: 1 kg.
Many recipes are possible with Ravifruit Mango fruit puree, here is the recipe for Mango fruit mousse:
Ingredients:
- Mango fruit puree: 1 kg
- Sugar: 80g
- Liquid whole cream: 800g
- gelatin: 26g
The process:
- Soften the gelatin in cold water
- In a saucepan, heat 300g of mango puree with the softened, drained gelatin - set aside
- In another saucepan, melt 700g of mango puree, then add the mixture from the first saucepan (fruit puree/gelatin) + sugar
- wait until the mixture has cooled down, then gently add the whipped liquid cream.
- And there it is, it's ready, you can now pour your fruit mousse into a pastry ring or a silicone mold .
