Glucose syrup is widely used in baking, particularly for making caramels, homemade ice cream, nougatine, and baked sweets. It prevents sugar crystallization and is therefore a staple in every budding pastry chef's cupboard!

It is also essential for creating a beautiful mirror glaze, improving the softness of madeleines, mousses and other desserts.

Tips for using your different desserts:

Ice creams & sorbets: add 30 to 50 g of glucose per kg for a creamier and softer texture.

Caramel & nougatine: add glucose to delay crystallization and obtain a shiny and even finish.

Mirror glazes: Add glucose to balance the fluidity and improve the shine of your glazes.

Choux pastry: Add a tablespoon for softer, moisture-resistant choux pastry.

For storage and use:

Dilute in your preparation (water, milk or cream) before cooking to ensure perfect dispersion.

Respect a ratio of 20 to 30% of the total weight of sugar or cream.

Do not bring to a prolonged boil alone.

Close the jar tightly after use and store away from heat and humidity.
